First, Jack Zipes' book THE BROTHERS GRIMM: From Enchanted Forests to the Modern World published by Routledge in 1988 would be a good place to start, especially Chapter 5 "The German Obsession with Fairy Tales"
Second, though it is fiction, I would highly recommend GRIMM'S LAST FAIRYTALE by Hayden Middleton (St. Martin's Press, 1999) It is very insightful when it comes to the political motivations of the brothers Grimm. It's worth reading even if you aren't doing a paper.
