Re: sleeping beauty and sexual symbolism
Have a read of Bruno Bettleheim's 'uses of enchantment', which looks in depth at all the popular fairytales and their psycho-sexual symbolism. Also Angela Carter's 'The Bloody Chamber and other stories', in which she re-writes fairytales in a way which uncovers their blatent sexual content.
Good luck!

....oh yes, and 'Women who run with the wolves' by Clarissa Pinlola Estes - another very popular book to do with sexual symbolism in european fairytales and folklore.

Re: sleeping beauty and sexual symbolism
There is a trilogy of books by A.N.
Roquelaure (aka, Anne Rice), which is pretty much the Sleeping
Beauty story told by way of pornography. Sleeping Beauty is
raped by the prince and made into a sex slave.
