Marie Louise von Franz
Check your library for the author Marie Louise Von Franz--they should have her work--she is a jungian who does mostly really interesting Junguan analysis of fairy tales.

And if you are pressed for time its really better to pick one or two tales to focus on rather trying to be to broad . There is a lot of material out there for even a single tale and its variants--and we might be better able to give you more specific help.

archetypes
von Franz rocks; so does Sibylle Birkahuser-Oeri. Between the 2 I'd start with Franz.

Studies in Jungian Psychology is a series of books several of which are relevant.
